Earl Grey Cake Recipe

Earl Grey cake is one of those cakes with strong wonderful taste without being too sweet yet rich in aroma. It has to be one of my favorite cakes lately.



Earl grey comes in many packaging. Tea bags, tea leaves, and in powder form. I personally use Bigelow Earl Grey Tea bags. It is little pricier than I want but from my perfect earl grey taste search, I ended up with Bigelow! It doesn't have high bitter taste or overwhelming citrus flavor, that comes in the way of my baking. Of course, everyone has different tastes and preference, so search for your favorite earl grey tea to work with the cake!


Earl Grey Cake Recipe


Prep Time: 15 min Cook time: 20 min Cake Size: 7", serves 8-10


Ingredients

  • 230g Unsalted Butter (Room Temp)

  • 100g Semi Sweet Chocolate Chips (Private Selection 43%)

  • 130g White Sugar

  • 6 Extra Large Eggs (Room Temp)

  • 157g Cake Flour

  • 2 Earl Grey Tea Bags (Bigelow)

  • 8g Baking Powder

  • 1 Tsp Vanilla Extract


Preparation

  1. Mix powder ingredients together with a whisk on a separate bowl (flour, earl grey, baking powder)

  2. Preheat oven to 330°F

  3. Spray nonstick baking spray on three 7" cake pan and lay parchment paper on the bottom


Instruction

  1. In a medium or large bowl, using hand mixer, cream butter till smooth and fluffy (approx 2 min)

  2. Using double bowl method (recommended to use stainless bowls for better heat transfer), place chocolate chips on the top bowl and hot water on the bottom bowl. Move and mix the chocolate chips around till smoothly melted

  3. Add your smooth chocolate into your butter bowl, then mix

  4. Add in sugar and continue to mix

  5. Add in eggs one by one. To ensure good mix, use spatula to scrape down the sides of the bowl and the center of the bowl

  6. Add vanilla extract

  7. Add in powdered ingredients and mix. Do not overmix

  8. Separate your batter into 3 equal amounts into your cake pans

  9. Tap your cake pans against your counter top to help air bubbles escape

  10. Bake for 25-30 minutes and let cool

  11. After 5-10 minutes of cooling, take them out and cool them on cooling rack


What makes cakes delicious and irresistible? It's honestly the filling and the frosting that compliments the sheets! For this Earl Grey Cake, I used Earl Grey Buttercream Filling to enhance the earl grey taste overall.


Earl Grey Buttercream


Prep Time: 2 min Cook time: 5 min Coverage: filling for 7"cake (two layer)


Ingredients

  • 300g Italian Meringue Buttercream (Divided to 40g & 260g)

  • 25g Bittersweet Chocolate Chips (Ghiradelli 60%)

  • 1 Earl Grey Tea Bags (Bigelow)


Preparation

  1. Microwave 40g of buttercream for 5-10 seconds and mix the earl grey in. DO NOT overheat! Let it sit


Instruction

  1. Using double bowl method (recommended to use stainless bowls for better heat transfer), place chocolate chips on the top bowl and hot water on the bottom bowl. Move and mix the chocolate chips around till smoothly melted. Take your top bowl out and wipe the excess water off the bowl. Tip: Make sure your chocolate isn't too hot so your buttercream doesn't become too melted

  2. Pour the smoothly melted chocolate into your 260g buttercream, then mix with spatula

  3. Using Tea Strainer, pour in your melted earl grey buttercream into the chocolate buttercream mix. Fold mix your buttercream with spatula


Stack your cake as you fill the center with this delicious buttercream! Then enjoy amazing tasting cake with your choice of beverage. - Envy
