Buttercream Recipe (T1)

There are so many buttercream recipe out there that you can quickly google but many have asked me exactly what buttercream I use to make my flowercakes. So here's the recipe that I use to make my pipe perfect buttercream!

(Type 1, Cold IMBC) It's closest to Italian Meringue Buttercream made with cold butter. Just be aware cold butter can possibly dent your whisk, so don't forget to chop them up into smaller pieces! Don't say I didn't warn you.

Buttercream Recipe

Prep Time: 5 min Cook time: 30 min to 1hr depending on batch size

Recommended Batch Size : 2 or 3 Batch (will result in left overs)


  • 450g Unsalted Butter (Cold 5~10 min out of the fridge before mix)

  • 150g White Sugar

  • 30g White Sugar (Separate)

  • 50g Water

  • 4 Extra Large Egg Whites (Cold)

  • Salt (Tiny pinch)

  • 1/4 Tsp White Rum

  • 1/2 Tsp Vanilla Extract (Less if you're worried about color)


  1. In a pot, have sugar (150g) and water ready to go on a stove

  2. In a tiny bowl, have sugar (30g) and salt ready to go

  3. Separate your egg whites in your mixing bowl


  1. Heat your pot of sugar water on med/high heat - do NOT stir

  2. Whip your egg whites on high speed *Step 1 & 2 should be done simultaneously

  3. Add in your tiny bowl of sugar/salt into the mixer

  4. Continue to mix until your whipped eggs form a firm peak

  5. Keep an eye on your sugar water till it reaches 118°C

  6. When ready, take the pot to the mixer and drizzle down against the mixer bowl while mixing on high

  7. Add rum and vanilla extract. Continue to mix for a minute

  8. Stop the mixer or set it on the lowest speed and let it cool completely (to speed up: use a fan)

  9. Take out your butter and chop them into smaller pieces

  10. When completely cooled, add in your butter blocks set on low speed

  11. When butter breaks down, raise the mixing speed to med/high and continue to mix until your butter is pipe-perfect buttercream

The butter in this photo looks really yellow due to my kitchen lighting (sorry for the poor photo quality). The finished and actual product looks close to ivory white like the last picture

Edit: clarification was added. rum/vanilla amount was decreased for less color tint for people who couldn't achieve whiter butter. *rum is for taste, not needed if you do not want to add
